So I have been officially meat-free for a week.
And let me tell you, I want a cheeseburger. Just kidding...well sort of. But really going vegetarian for Lent has been fun. I like figuring out my meals, working in different sources of protein. Alleluia for hummus! (oh...not supposed to say that during Lent)
Here's a typical veggie day:
Breakfast: 1 egg+ 1 egg white+ goat cheese in whole-wheat tortilla
apple
Snack: 2 clementines
Lunch: salad + whole wheat pita+hummus (I have been totally digging Mediterranean food)
Snack: brussel sprouts (....they're delicious!)
Dinner: pizza (always a good vegetarian option--pasta too)
I do miss meat. Some chik-fi-la sounds really yummy right now. But I'm managing. Only like...30 more days of no meat.
